Ingredients

Falafel Burgers

  • 1 (14 oz) can chickpeas, drained
  • 1/2 small onion, roughly chopped
  • 3 garlic cloves
  • 1 cup fresh parsley (loosely packed)
  • 1 cup fresh coriander (loosely packed)
  • 2 cups fresh spinach (loosely packed)
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • Pinch of black pepper
  • 3–4 tbsp chickpea flour (or plain flour)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil (optional)

Garlic Yogurt

  • 1 small garlic clove, grated
  • 1/2 cup plant-based yogurt
  • Pinch of salt
  • Squeeze of lemon

Assembly

  • 2 tbsp olive oil
  • bakerly Sriracha Brioche Burger Buns
  • Middle Eastern pickles
  • Chili sauce

Falafel Smash Burger

Full Time: 35 minutes

Drain the chickpeas. Roughly chop the onion, garlic, parsley, coriander, and spinach.

Add the chickpeas, onion, garlic, parsley, coriander, and spinach to a food processor. Pulse until finely minced but not smooth.

Add cumin, coriander, salt, pepper, flour, lemon juice, and olive oil. Pulse again until well combined and the mixture holds together. Tip: If the mix feels too soft, add a bit more flour.

Divide the mixture into 4 equal balls. Heat olive oil in a frying pan over medium-high heat. Add the falafel balls, cover with baking paper, and smash flat using a burger press, spatula, or the bottom of a pan. Season with salt. Cook for about 2 minutes on each side, until golden and crisp.

Toast the bakerly Sriracha Brioche Burger Buns in the pan until golden. Spread garlic yogurt on the base bun. Add one falafel patty, a spoonful of yogurt, and a few pickles. Stack the second patty on top, add more yogurt, and drizzle with chili sauce.
